Using a research confirmed process that includes a custom built European oak based drying cabinet, selected hops (the highest quality) are put through the drying and aging process. Under the watchful nose of our experienced staff, and with the help of chemical analysis, the hops are allowed to age carefully over time to yield significant shifts in their flavour until a desired set of target values are met for each hop that maximizes its potential.

A critical part of the brewing tradition, this program was started in 2015 and has been an integral part of our develop as a farm. These hops are available in small amounts to the right brewer looking to add an authentic signature flavour to their european, and mixed fermentation beers
